Easy Tomato Curry by Chaitali

I got this delicious recipe from my mom. It is very simple, easy and can be made in a jiffy when you have unexpected guests coming over. The curry tastes good if fresh tomatoes are used instead of the canned stuff.

Ingredients Required:

1. Tomatoes - 6 medium
2. Onion - 1 medium
3. Green Chili - 1
4. Delhi Chana (Chickpeas/Garbanzo beans) - 1 cup soaked
5. Salt - to taste

Seasoning:

1. Oil - 1 tea spoon
2. Mustard - 1/4 tea spoon
3. Cumin - 1/4 tea spoon
4. Turmeric - a pinch
5. Cilantro/kottimeer - to garnish

Procedure:

· Soak chana overnight. (If using canned garbanzo beans, you can add them directly while cooking)
· Take oil in a pan and turn the heat on
· Add mustard, cumin, turmeric one after the other
· When the seasoning starts to splutter, add chopped green chili and onions and sauté for 2 minutes
· Add chopped tomatoes and cook on medium heat by covering with a lid
· When the tomatoes are soft and cooked completely (which might take 6-7 minutes), add salt and chickpeas and cook for couple of minutes
· Garnish with cilantro
· Serve hot with rice/chapathi!!!
